Aged<br \/>\nand most prized, but highest in<br \/>\ndeadly mercury.<\/p>\n<p>So PC!  From a<br \/>\ncertified sustainable<br \/>\ntuna fishery,<\/p>\n<p>And caught by &#8220;fishing<br \/>\nfamilies&#8221; as well.  As they say,<br \/>\n&#8220;Families that fish&#8230;&#8221;<\/p>\n<p>Open the can, and<br \/>\nsuddenly surrounded by<br \/>\ncats.  A hopeful sign.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/blog.red-bean.com\/sussman\/images\/at3.jpg\"\/><\/p>\n<p>Bouquet: ocean brine,<br \/>\nlike the bottom of a dock.<br \/>\nCooked in its own juice.<\/p>\n<p>Solid round of flesh,<br \/>\nnot ground bits of cheap-o stuff.<br \/>\nFirm succulent loin!<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/blog.red-bean.com\/sussman\/images\/at2.jpg\"\/><\/p>\n<p>First slice hard to dig;<br \/>\ntearing a single muscle,<br \/>\nmy teeth sink right in.<\/p>\n<p>Nice starting flavor,<br \/>\nlike a fine steak on a grill<br \/>\na long smooth middle<\/p>\n<p>With just a whisper<br \/>\nof smokiness.  But alas,<br \/>\na sub-par finish:<\/p>\n<p>Touch of bitterness<br \/>\non the tongue.  Perhaps the fish<br \/>\nwas not so merry.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/blog.red-bean.com\/sussman\/images\/at4.jpg\"\/><\/p>\n<p>But au jus delights,<br \/>\nBlithely bathed in own fluids<br \/>\nSalty without salt!<\/p>\n<p>So rich and intense,<br \/>\nthere&#8217;s my albacore quota<br \/>\nfor the remainder.<\/p>\n<p>Recommendation:<br \/>\nPair with soft autumn mornings<br \/>\nor moonlit beaches.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>O Albacore!
